promoted primarily as a food truck event and attendance is high then an increased number of trucks is appropriate.
It's historically appropriate to assume only 10-15% of guests will purchase from the trucks if any of the following apply to the event:

● Will there be other food vendors present (e.g. catering tents, concession stands,
